Sometimes the best pub ever just pops up out of nowhere. A few years ago I was in Liscannor, Co Clare, and persuaded friends that the place to go for a pint was a tiny little bar that had the name T O’Brien above the door. Inside, there was a Guinness pump and solitary whiskey optic, a stone floor, plain counter, and not much else. It was basic, ancient, and just about perfect.

Why? Until now, I hadn’t really given it much thought. But author Ali Dunworth seems to have a handle on such things. She’s just written a book called A Compendium of Irish Pints and has plenty to say about what makes a ‘proper’ pub.
